- 2 ¼ cups (270 g) all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup (113 g) butter, room temperature
- 1 cup (200 g) granulated sugar
- ½ cup (60 g) sweetened shredded coconut
- 2 large eggs
- 1 tsp key lime zest
- ¼ cup (59 ml) key lime juice
- 1 tsp coconut extract
- ½ cup (60 g) powdered sugar
Instructions
- Preheat oven to 350°F. Line baking sheets.
- Whisk dry ingredients.
- Cream butter, sugar, and coconut.
- Add eggs, lime zest, juice, and extract.
- Mix in dry ingredients.
- Roll dough balls in powdered sugar.
- Bake 9-11 minutes.
- Cool before serving.
Notes
Dough can be chilled if too sticky. Store in an airtight container.
