A bright, fresh, and crunchy chicken salad featuring sweet strawberries, buttery pecans, and a creamy poppy seed dressing. Perfect for sandwiches, salads, or appetizers.

- 2 cups shredded chicken
- 2 celery stalks, chopped into 1/4 in. pieces
- 1 green onion, chopped thin
- 5–6 large strawberries, diced
- ⅓ cup chopped pecans
- ¼ cup mayonnaise
- 2 tablespoons Greek yogurt, plain
- 1 teaspoon dijon mustard
- 1 teaspoon lemon juice
- 1 tablespoon poppy seeds
- ½ teaspoon pepper
- salt to taste
Instructions
- Prepare all ingredients: chop celery, green onion, strawberries, and pecans. Shred chicken if not already done.
- In a large bowl, combine chicken, celery, green onion, and pecans.
- In a small bowl, whisk together mayo, yogurt, Dijon, lemon juice, poppy seeds, and pepper.
- Pour dressing over chicken mixture and stir until evenly coated. Season with salt to taste.
- Gently fold in diced strawberries. Serve immediately or chill for 20-30 minutes before serving.
Notes
For best results, add strawberries just before serving if making ahead. Toast pecans for enhanced flavor.
