Description

A bright, fresh, and crunchy chicken salad featuring sweet strawberries, buttery pecans, and a creamy poppy seed dressing. Perfect for sandwiches, salads, or appetizers.

  • 2 cups shredded chicken
  • 2 celery stalks, chopped into 1/4 in. pieces
  • 1 green onion, chopped thin
  • 56 large strawberries, diced
  • ⅓ cup chopped pecans
  • ¼ cup mayonnaise
  • 2 tablespoons Greek yogurt, plain
  • 1 teaspoon dijon mustard
  • 1 teaspoon lemon juice
  • 1 tablespoon poppy seeds
  • ½ teaspoon pepper
  • salt to taste

Instructions

  1. Prepare all ingredients: chop celery, green onion, strawberries, and pecans. Shred chicken if not already done.
  2. In a large bowl, combine chicken, celery, green onion, and pecans.
  3. In a small bowl, whisk together mayo, yogurt, Dijon, lemon juice, poppy seeds, and pepper.
  4. Pour dressing over chicken mixture and stir until evenly coated. Season with salt to taste.
  5. Gently fold in diced strawberries. Serve immediately or chill for 20-30 minutes before serving.

Notes

For best results, add strawberries just before serving if making ahead. Toast pecans for enhanced flavor.
