Description

A cozy and elegant meal featuring juicy, glazed pork tenderloin served over creamy mashed sweet potatoes. Perfect for a special weeknight dinner or holiday gathering.


Ingredients

  • 1 pound boneless pork tenderloin
  • 2 tablespoons olive oil
  • 1/2 cup apple cider
  • 1/4 cup brown sugar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon butter (for glaze)
  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup butter (for mash)
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season pork with salt and pepper.
  3. Sear pork in hot oil in an oven-safe skillet until browned on all sides.
  4. Whisk together cider, brown sugar, mustard, and 1 tbsp butter for the glaze.
  5. Pour glaze over pork and transfer skillet to the oven. Bake for 20-25 mins or until 145°F internally.
  6. Meanwhile, boil sweet potatoes until tender. Drain.
  7. Mash potatoes with 1/4 cup butter, milk, salt, and pepper.
  8. Let pork rest for 5 minutes before slicing. Serve over mash.

Notes

An oven-safe skillet is highly recommended for this recipe. Always use a meat thermometer for perfectly cooked pork.
