- 1 pound boneless pork tenderloin
- 2 tablespoons olive oil
- 1/2 cup apple cider
- 1/4 cup brown sugar
- 2 tablespoons Dijon mustard
- 1 tablespoon butter (for glaze)
- 2 large sweet potatoes, peeled and cubed
- 1/4 cup butter (for mash)
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Season pork with salt and pepper.
- Sear pork in hot oil in an oven-safe skillet until browned on all sides.
- Whisk together cider, brown sugar, mustard, and 1 tbsp butter for the glaze.
- Pour glaze over pork and transfer skillet to the oven. Bake for 20-25 mins or until 145°F internally.
- Meanwhile, boil sweet potatoes until tender. Drain.
- Mash potatoes with 1/4 cup butter, milk, salt, and pepper.
- Let pork rest for 5 minutes before slicing. Serve over mash.
Notes
An oven-safe skillet is highly recommended for this recipe. Always use a meat thermometer for perfectly cooked pork.
