- 1 cup long-grain rice (like basmati or jasmine)
- 2 cups vegetable or chicken broth
- 1 medium lemon (juiced and zested)
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ¼ teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse rice in a strainer under cold water until water runs clear.
- Heat broth in a saucepan until simmering.
- In a pot, heat oil and sauté garlic for 1-2 minutes until fragrant.
- Add rinsed rice to the pot and toast for 2-3 minutes, stirring.
- Pour in hot broth, lemon juice, zest, oregano, salt, and pepper. Stir.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes.
- Remove from heat, let sit covered for 5 minutes, then fluff with a fork and garnish with parsley.
Notes
For best results, do not lift the lid while the rice is simmering. Letting it rest covered after cooking is key for perfect texture.
