Ingredients

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 ripe bananas, mashed (about 1½ cups)
  • ¼ cup sour cream
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Whisk flour, baking soda, and salt in a bowl.
  3. Cream butter and sugar; beat in eggs and vanilla. Stir in bananas and sour cream.
  4. Gradually add dry ingredients to wet, mixing until just combined.
  5. Beat cream cheese and sugar; add egg and vanilla.
  6. Layer half the banana batter in the pan, top with cream cheese mixture, then remaining batter. Swirl gently.
  7. Bake 50-60 minutes. Cool before slicing.

Notes

For best results, use very ripe bananas.
