Description

Juicy, crispy chicken thighs glazed in a sweet and tangy apple cider reduction, served with a bright, crunchy no-mayo autumn slaw. The perfect easy fall dinner.


Ingredients

  • 6 chicken thighs, bone-in and skin-on
  • 1 cup apple cider
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tablespoon cooking oil
  • 2 cups green cabbage, shredded
  • 1 cup carrots, shredded
  • 1 medium Granny Smith apple, thinly sliced
  • 2 tablespoons apple cider vinegar
  • 1/4 teaspoon celery seeds
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley or chives, chopped

Instructions

  1. Simmer cider, honey, mustard, and garlic until a thick glaze forms.
  2. Sear seasoned chicken thighs skin-side down until crispy, then flip.
  3. Pour glaze over chicken and simmer, basting, until sticky.
  4. Toss cabbage, carrots, and apple with vinegar, celery seeds, salt, and pepper.
  5. Stir herbs into slaw.
  6. Serve chicken immediately with slaw on the side.

Notes

For crispier skin, ensure chicken is patted very dry before searing.
