- 6 chicken thighs, bone-in and skin-on
- 1 cup apple cider
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 1 tablespoon cooking oil
- 2 cups green cabbage, shredded
- 1 cup carrots, shredded
- 1 medium Granny Smith apple, thinly sliced
- 2 tablespoons apple cider vinegar
- 1/4 teaspoon celery seeds
- Salt and pepper, to taste
- 2 tablespoons fresh parsley or chives, chopped
Instructions
- Simmer cider, honey, mustard, and garlic until a thick glaze forms.
- Sear seasoned chicken thighs skin-side down until crispy, then flip.
- Pour glaze over chicken and simmer, basting, until sticky.
- Toss cabbage, carrots, and apple with vinegar, celery seeds, salt, and pepper.
- Stir herbs into slaw.
- Serve chicken immediately with slaw on the side.
Notes
For crispier skin, ensure chicken is patted very dry before searing.
