Description

A vibrant, spicy-sweet Thai-inspired shrimp salad loaded with fresh veggies and herbs.


Ingredients

  • 1 pound raw shrimp, peeled and deveined
  • 4 cups mixed salad greens (arugula, spinach, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, julienned
  • 1 bell pepper, thinly sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • ¼ cup fresh mint leaves, chopped
  • 1 avocado, sliced
  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon chili flakes (adjust to taste)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Whisk together fish sauce, lime juice, brown sugar, chili flakes, salt, and pepper for the dressing.
  2. Cook shrimp in olive oil until pink, 2-3 minutes per side.
  3. Toss greens, tomatoes, cucumber, bell pepper, onion, cilantro, and mint in a large bowl.
  4. Add shrimp and dressing, tossing gently to coat.
  5. Top with avocado slices and serve immediately.

Notes

Adjust chili flakes to taste. Best served fresh.
