A vibrant, spicy-sweet Thai-inspired shrimp salad loaded with fresh veggies and herbs.
Ingredients

- 1 pound raw shrimp, peeled and deveined
- 4 cups mixed salad greens (arugula, spinach, romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, julienned
- 1 bell pepper, thinly sliced
- ¼ cup red onion, thinly sliced
- ¼ cup fresh cilantro, chopped
- ¼ cup fresh mint leaves, chopped
- 1 avocado, sliced
- 3 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- 1 teaspoon chili flakes (adjust to taste)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Whisk together fish sauce, lime juice, brown sugar, chili flakes, salt, and pepper for the dressing.
- Cook shrimp in olive oil until pink, 2-3 minutes per side.
- Toss greens, tomatoes, cucumber, bell pepper, onion, cilantro, and mint in a large bowl.
- Add shrimp and dressing, tossing gently to coat.
- Top with avocado slices and serve immediately.
Notes
Adjust chili flakes to taste. Best served fresh.
