Ingredients

- 1 cup unsalted butter, softened
- ½ cup granulated sugar
- 1/3 cup honey
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup shelled pistachios, coarsely chopped
- 1 tablespoon coarse sea salt (for topping)
- 2 tablespoons honey (optional, for drizzling)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter and sugar until fluffy. Mix in honey, egg, and vanilla.
- Whisk flour, baking soda, and salt in a separate bowl.
- Gradually add dry ingredients to wet mixture, then fold in pistachios.
- Shape dough into balls, flatten slightly, and bake for 12-15 minutes.
- Sprinkle with sea salt while warm. Drizzle with honey if desired.
