Description

Soft, chewy cookies with crunchy pistachios, sweet honey, and a hint of sea salt.


Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1/3 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup shelled pistachios, coarsely chopped
  • 1 tablespoon coarse sea salt (for topping)
  • 2 tablespoons honey (optional, for drizzling)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter and sugar until fluffy. Mix in honey, egg, and vanilla.
  3. Whisk flour, baking soda, and salt in a separate bowl.
  4. Gradually add dry ingredients to wet mixture, then fold in pistachios.
  5. Shape dough into balls, flatten slightly, and bake for 12-15 minutes.
  6. Sprinkle with sea salt while warm. Drizzle with honey if desired.
