Description

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • Pinch of salt
  • ½ cup unsalted butter, melted
  • ¾ cup raw honey
  • 2 large eggs
  • 1 cup fresh orange juice
  • Zest of 2 oranges
  • 1 tbsp grated fresh ginger
  • Optional Glaze: 2 tbsp honey + 2 tbsp orange juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking pan.
  2. Whisk dry ingredients (flour, baking soda, spices, salt) in a bowl.
  3. In a separate bowl, combine melted butter, honey, and eggs.
  4. Stir in orange juice, zest, and fresh ginger.
  5. Fold dry ingredients into wet ingredients until just combined.
  6. Pour batter into pan and bake for 40-45 minutes.
  7. Let cool in pan for 10 minutes before transferring to a wire rack.
  8. For the glaze, mix honey and orange juice and brush over warm cake.

Notes

Cake can be stored in an airtight container for 3 days or frozen for up to 3 months.
