- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground ginger
- ½ tsp cinnamon
- ¼ tsp nutmeg
- Pinch of salt
- ½ cup unsalted butter, melted
- ¾ cup raw honey
- 2 large eggs
- 1 cup fresh orange juice
- Zest of 2 oranges
- 1 tbsp grated fresh ginger
- Optional Glaze: 2 tbsp honey + 2 tbsp orange juice
Instructions
- Preheat oven to 350°F (175°C). Grease a baking pan.
- Whisk dry ingredients (flour, baking soda, spices, salt) in a bowl.
- In a separate bowl, combine melted butter, honey, and eggs.
- Stir in orange juice, zest, and fresh ginger.
- Fold dry ingredients into wet ingredients until just combined.
- Pour batter into pan and bake for 40-45 minutes.
- Let cool in pan for 10 minutes before transferring to a wire rack.
- For the glaze, mix honey and orange juice and brush over warm cake.
Notes
Cake can be stored in an airtight container for 3 days or frozen for up to 3 months.
