Description

Tender white fish baked atop a colorful medley of roasted Mediterranean vegetables, infused with lemon, olives, and herbs.


Ingredients

  • 1.5 lbs white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • 1 tablespoon capers (optional)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Toss veggies, olives, and capers with olive oil, oregano, paprika, salt, and pepper.
  3. Spread veggies in the dish, top with fish, and season with lemon juice, zest, salt, and pepper.
  4. Bake 20–25 minutes until fish flakes easily.
  5. Garnish with parsley and serve with lemon wedges.

Notes

For best results, use fresh fish and serve immediately.
