Description

Moist, fluffy, and packed with blueberries, these Healthy Blueberry Oatmeal Muffins are a nutritious breakfast or snack.


Ingredients

  • 1¼ cups whole wheat pastry flour
  • ¾ cup quick oats
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp ground cinnamon
  • ¼ tsp fine sea salt
  • ½ cup pure maple syrup
  • ⅓ cup light olive oil
  • ¼ cup non-dairy milk
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup blueberries (fresh or frozen)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Whisk dry ingredients in a large bowl.
  3. In another bowl, whisk wet ingredients until smooth.
  4. Fold wet into dry ingredients, then gently mix in blueberries.
  5. Divide batter into muffin cups and bake for 20–25 minutes.
  6. Cool in pan for 5 minutes, then transfer to a wire rack.
