- 1¼ cups whole wheat pastry flour
- ¾ cup quick oats
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp ground cinnamon
- ¼ tsp fine sea salt
- ½ cup pure maple syrup
- ⅓ cup light olive oil
- ¼ cup non-dairy milk
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup blueberries (fresh or frozen)
Instructions
- Preheat oven to 350°F (175°C) and prepare muffin tin.
- Whisk dry ingredients in a large bowl.
- In another bowl, whisk wet ingredients until smooth.
- Fold wet into dry ingredients, then gently mix in blueberries.
- Divide batter into muffin cups and bake for 20–25 minutes.
- Cool in pan for 5 minutes, then transfer to a wire rack.
