Ingredients

- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp garlic powder
- Juice of 1 lime
- Salt and pepper to taste
- 1 1/2 cups corn (fresh, canned, or thawed frozen)
- 1/4 cup diced red bell pepper
- 1/4 cup diced green onions
- 2 tbsp chopped cilantro
- 2 ripe avocados
- 1/2 cup mayo or Greek yogurt
- 1 tsp hot sauce (adjust to taste)
Instructions
- Marinate shrimp with spices and lime juice.
- Mix corn salsa ingredients and chill.
- Mash avocados with lime, salt, and pepper.
- Grill shrimp for 2–3 minutes per side.
- Whisk together creamy sauce ingredients.
- Assemble bowls with rice, salsa, avocado, shrimp, and sauce.
Notes
For best results, grill shrimp just before serving.
