Description

Crispy, tender baby potatoes roasted in a vibrant lemon, garlic, and oregano marinade. An easy, flavor-packed Greek side dish.


Ingredients

  • 2 pounds baby potatoes, halved
  • 1/4 cup extra virgin olive oil
  • Juice of 2 whole lemons
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  4. Toss potatoes in the marinade until evenly coated.
  5. Spread potatoes in a single layer on a baking sheet.
  6. Roast for 30-40 minutes, flipping halfway, until golden and tender.
  7. Garnish with fresh parsley and serve.

Notes

For extra crispiness, ensure potatoes are not crowded on the pan. Fresh lemon juice is highly recommended.
