- 32 oz frozen cubed hash browns, thawed
- ½ cup (1 stick) unsalted butter, divided
- 2 cups sharp cheddar cheese, shredded
- 1 ½ cups sour cream
- 1 small yellow onion, diced
- 2 tsp garlic, minced
- ¼ cup all-purpose flour
- 1 tsp kosher salt
- ½ tsp black pepper
- ½ tsp cayenne pepper
- ½ tsp dried mustard
- ½ cup chicken broth
- ½ cup whole milk
- 2 large yellow onions, thinly sliced
- 4 cups vegetable oil
- ½ tsp kosher salt (for fried onions)
Instructions
- Preheat oven to 350°F. Grease a 9×13-inch baking dish.
- Mix hash browns, ¼ cup melted butter, cheese, and sour cream in a bowl.
- Sauté diced onions and garlic in remaining butter. Whisk in flour and spices.
- Gradually add milk and broth, cooking until thickened. Combine with potatoes.
- Spread into dish and bake 45-50 minutes.
- Fry sliced onions in hot oil until golden. Drain and salt.
- Top baked casserole with fried onions and serve.
Notes
For extra crispiness, broil the fried onions for 1-2 minutes before serving.
