  • 32 oz frozen cubed hash browns, thawed
  • ½ cup (1 stick) unsalted butter, divided
  • 2 cups sharp cheddar cheese, shredded
  • 1 ½ cups sour cream
  • 1 small yellow onion, diced
  • 2 tsp garlic, minced
  • ¼ cup all-purpose flour
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper
  • ½ tsp dried mustard
  • ½ cup chicken broth
  • ½ cup whole milk
  • 2 large yellow onions, thinly sliced
  • 4 cups vegetable oil
  • ½ tsp kosher salt (for fried onions)

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking dish.
  2. Mix hash browns, ¼ cup melted butter, cheese, and sour cream in a bowl.
  3. Sauté diced onions and garlic in remaining butter. Whisk in flour and spices.
  4. Gradually add milk and broth, cooking until thickened. Combine with potatoes.
  5. Spread into dish and bake 45-50 minutes.
  6. Fry sliced onions in hot oil until golden. Drain and salt.
  7. Top baked casserole with fried onions and serve.

Notes

For extra crispiness, broil the fried onions for 1-2 minutes before serving.
