Description
Tender cod fillets with an irresistibly crispy, golden Parmesan and panko crust, cooked to perfection in the air fryer. A quick, healthy, and delicious weeknight dinner.

- 4 cod fillets (about 6 oz each)
- 2 tablespoons olive oil
- ½ cup grated Parmesan cheese
- ¾ cup panko breadcrumbs
- 1 teaspoon lemon zest
- ½ teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- 2 tablespoons unsalted butter, melted
- 1 tablespoon fresh parsley, chopped
- 1 lemon, cut into wedges (for serving)
Instructions
- Pat cod fillets dry. Brush with oil and season with salt, pepper, and garlic powder.
- In a shallow dish, mix Parmesan, panko, and lemon zest.
- Press each fillet firmly into the mixture to coat. Rest for 5 minutes.
- Preheat air fryer to 400°F. Spray basket with oil.
- Air fry fillets in a single layer for 6 minutes. Flip and cook 4-5 minutes more until golden and flaky.
- Mix melted butter with a squeeze of lemon juice. Drizzle over cod, garnish with parsley, and serve with lemon wedges.
Notes
For best results, ensure fish is very dry before coating and do not overcrowd the air fryer basket.
