Description

An elegant and festive main course of chicken breasts stuffed with creamy brie and tangy cranberry sauce, perfect for your Christmas dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 4 oz (115 g) brie cheese, sliced into strips
  • ½ cup cranberry sauce (homemade or store-bought)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme leaves)

Instructions

  1. Preheat oven to 375°F (190°C). Cut a pocket into each chicken breast and season inside and out.
  2. Stuff pockets with brie and cranberry sauce. Secure with toothpicks if needed.
  3. Heat oil and butter in an oven-safe skillet. Sear chicken for 2-3 mins per side until golden.
  4. Sprinkle with thyme and transfer skillet to the oven. Bake for 20-25 mins or until 165°F internally.
  5. Rest for 5 minutes before serving.

Notes

Using a meat thermometer is the best way to ensure perfectly cooked chicken.
