An elegant and festive main course of chicken breasts stuffed with creamy brie and tangy cranberry sauce, perfect for your Christmas dinner.

- 4 boneless, skinless chicken breasts
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 4 oz (115 g) brie cheese, sliced into strips
- ½ cup cranberry sauce (homemade or store-bought)
- 1 tablespoon olive oil
- 1 tablespoon butter
- ½ teaspoon dried thyme (or 1 teaspoon fresh thyme leaves)
Instructions
- Preheat oven to 375°F (190°C). Cut a pocket into each chicken breast and season inside and out.
- Stuff pockets with brie and cranberry sauce. Secure with toothpicks if needed.
- Heat oil and butter in an oven-safe skillet. Sear chicken for 2-3 mins per side until golden.
- Sprinkle with thyme and transfer skillet to the oven. Bake for 20-25 mins or until 165°F internally.
- Rest for 5 minutes before serving.
Notes
Using a meat thermometer is the best way to ensure perfectly cooked chicken.
