Description
Tender chicken thighs caramelised in a sweet-soy glaze, simmered in a fragrant garlic ginger broth, and served over fluffy jasmine rice.
Ingredients

- 4 chicken thighs (bone-in, skin-on)
- 1 tablespoon vegetable oil
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon ginger, minced
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch (optional)
- Salt and pepper, to taste
- 2 cups jasmine rice
- 4 cups water
- Chopped green onions, for garnish
- Fresh cilantro, for garnish
Instructions
- Pat chicken dry, season with salt and pepper.
- Sear skin-side down in hot oil until golden.
- Flip, add soy sauce, sugar, garlic, and ginger.
- Pour in broth, simmer covered for 20 minutes.
- Cook rice separately.
- Optional: Thicken broth with cornstarch slurry.
- Serve chicken over rice, garnish with herbs.
Notes
For best results, use fresh ginger and garlic.
